If you were to add another egg and a tad more oil, it would also be fine and not ruin the soda bread. A 2nd egg makes breads richer. The reason I use water is less calories. When I bake breads which must last a week, I'll also add additional oil to keep it moist longer than a bread that'll get eaten in one meal.
